While on tour, Peters has traveled across the country barbecuing and grilling for thousands of festival attendees, so he knows a thing or two about quieting rowdy crowds by offering delicious, hot-off-the-grill meals. Peters is passionate about simplifying the intricacies of what it takes for anyone to pull off a successful tailgate. TIP 1: PREP
Prepare as much as you can ahead of time. Marinating meats is simple and easy. Here's a recipe we use on the tour that features marinated chicken, but works well with pork, too.
Brown Sugar Bourbon Chicken - Serves: 6 |
1 package McCormick® Grill Mates® Brown Sugar Bourbon Marinade |
1/4 cup oil |
1/4 cup water |
2 tablespoons Dijon Mustard |
2 pounds bone-in chicken |
Mix Marinade Mix, oil, water and mustard in small bowl. Reserve 2 tablespoons marinade for brushing. Place chicken in large resealable plastic bag or glass dish. Add remaining marinade; turn to coat well. Refrigerate 30 minutes or longer for extra flavor. Remove chicken from marinade. Discard any remaining marinade. |
Grill chicken over medium heat with lid closed 30 to 40 minutes or until cooked through, turning occasionally and brushing with reserved marinade. |
TIP 2: LEAVE YOUR BURGERS FROZEN
