Grill Beast Removes the Risk of BPA in Beer Can Chicken

Like most other commercially available cans, beer cans are lined with epoxy that contains BPA, a chemical that keeps foods from reacting to aluminum. There are studies which have associated BPA with a range of ailments, including cancer.

According to Jonathan Waldman, author of Rust: The Longest War, there are various names for this internal corrosion inhibitor.

Waldman says, "The FDA calls it a resinous and polymeric coating. At Can School, Ball employees called it an organic coating, or water-based polymer. The EPA calls it a chemical pollutant. Health researchers call it an endocrine disruptor, and a chronic toxin."

Cooks Illustrated evaluated the BPA leached into chicken using the beer can chicken method and came to the following conclusion:

They roasted two chickens, one using an open beer can containing 6 ounces of beer and the other using a stainless-steel vertical roaster, much like The Beast Roaster, with the same amount of beer poured into the reservoir. They collected the drippings from each chicken and created homogenous samples of the meat and skin of each chicken and sent these samples to a lab.

Each sample had less than 20 micrograms of BPA per kilogram, which is lower than the FDA's recommendation of less than 50 micrograms per kilogram of adult body weight. This led them to believe that cooking with an aluminum can is safe.
